Wedding Cake Flowers

Arranging fresh flowers for wedding cakes can sometimes be more guesswork than precision, with often only the bride’s description of the style and size of the cake to go on. Finding out what type of cake is being made is important, as gone are the days of solid tiers of fruit cake encased in rigid royal icing which could be relied on to support any weight of flowers.
Semi-naked or naked sponge cakes are very ‘on-trend’ and royal icing has been replaced, by and large, with buttercream. Vegan cakes are also increasing in popularity, where substitutes such as vegetable oil or even mashed bananas used to achieve the texture and consistency of a traditional sponge can make them very soft, another hazard when it comes to attaching flowers.
